Homemade: Double Chocolate Oatmeal Raisin Cookies

It was a peculiar day. Naturally left to my own devices it would have been most unseemly yet, indeed, I resorted to baking. That is between my sister and I, she is the baker among the two of us. Not to mention, do I willing enter the kitchen other than to eat.

Rather impressed with my self for baking up this batch of scrumptious cookies. An added bonus is the fact that they're gluten free. The recipe is must share, so here it is...

  • 1 c organic spelt flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 8 tbsp vegan butter
  • 1 large egg
  • 1 tbs vanilla extract
  • 1/2 c organic honey 
  • 1/3 c chocolate hemp milk
  • 1/3 c raw cocoa powder
  • 1 c organic raisins
  • 2 c organic rolled oats
  • 1 c semisweet chocolate chips


Preheat oven to 350°F.

Combine the oats, raisins, and chocolate chips; mix thoroughly and set aside.

In a large mixing bowl, stir the flour, baking powder, and baking soda. Add in the butter and blend. Then beat in the egg and honey until an even consistency is reached. Begin to pour in the chocolate milk along with
the oat/raisin/chocolate chip mixture.

Cover a baking sheet with aluminum foil. Scoop the cookie dough and form into your preferred size/shape. Set to bake for 12 minutes or until lightly golden.

☺ Allow the cookies to cool before devouring them entirely.
