Homemade: Gluten-free Vegan Cupcakes


Cutest yet ugliest gluten-free/vegan vanilla cupcakes for 4th of July

This is the result of substituting too much baking soda for baking powder combined with coconut flour, whoops!! The only positive being that they are gluten-free and vegan friendly, to say the least.

What went wrong? The cupcakes completely deflated. We managed to fill them with blueberry jam and topped them off with sugar icing with a dash of confetti sprinkles. Not too bad, they tasted pretty good after all!

Learn from our mistake! Phew, trail and error, we will know better next time to prevent ourselves from repeating this mishap in the future. ¯\_(ツ)_/ ¯
